The flavors of Vietnam leave us utterly enchanted. Each dish is a perfect mix of spicy, sweet and savory. The buzz of energy in the markets--as street stalls are set up. The sound of scooters whizzing by. The taste of green papaya and lime. The smell of cinnamon trees.
These hot peppers---a staple of Vietnamese cooking---caught our eye on our last visit to the street markets of Hanoi. We would make a chilled noodle salad and serve it with a bottle of Kabinett Riesling from Germany. What dish would you make with this market bounty and what wine would you serve with it?
